Lemon Shrimp on Zucchini Noodles

- 1 lb large shrimp peeled and deveined
- 2 tbsp olive oil
- 3 garlic cloves minced
- Zest of 1 lemon
- Juice of 1 lemon
- 1/4 tsp red pepper flakes optional
- Salt and black pepper to taste
- 2 tbsp fresh parsley chopped
- 4 medium zucchini spiralized into noodles
- 1 tbsp olive oil
- Salt and black pepper to taste

Get Recipe Ingredients
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the zucchini noodles and sauté for 2–3 minutes, just until tender.
Season with salt and black pepper. Remove from the skillet and set aside.
In the same skillet, heat 2 tablespoons of olive oil over medium heat.
Add garlic and red pepper flakes (if using) and sauté for 30 seconds until fragrant.
Add shrimp to the skillet. Season with salt and pepper. Cook for 2–3 minutes per side until pink and opaque.
Stir in lemon zest and juice, tossing to coat the shrimp. Cook for another minute.
Return the zucchini noodles to the skillet with the shrimp. Toss gently to combine.
Sprinkle with fresh parsley and garnish with lemon wedges.
