Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.
Prepare the Potatoes: Wash and dry the potatoes, then cut them in half (or into quarters if using larger potatoes). Make sure the pieces are roughly the same size for even cooking.
Toss the Potatoes: In a large bowl, toss the potatoes with olive oil, minced garlic, dried thyme, salt, and pepper until well coated.
