Ingredients
  

  • 1 cup (230g) unsalted butter, softened
  • 1 ¼ cups (250g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 3 cups (240g) old-fashioned rolled oats

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Cream the Butter and Sugar: In a large bowl, use an electric mixer to cream together the softened butter and brown sugar until light and fluffy, about 3-4 minutes. Add the egg and vanilla extract and mix until fully combined.
  • Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry mixture to the butter mixture, mixing until combined.
  • Add Oats: Stir in the rolled oats by hand, ensuring they are evenly distributed throughout the dough.
  • Shape the Cookies: Using a tablespoon or a small cookie scoop, drop balls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  • Bake: Bake for 10-12 minutes, or until the edges are golden brown and the centers look just set. For a chewier cookie, slightly underbake them by taking them out around 10 minutes.
  • Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
