Best skillet vegetables and egg scramble

As we all know, it is crucial to have a healthy breakfast. A hearty breakfast helps us get through the day. This is a classic, but you can change it up on a daily basis. Change up the veggies. Did you just finish a tough workout, feel free to add some protein (Vegetable or meat).

Ingredients
  

  • 4 large eggs
  • 1 tbsp olive oil or butter
  • 1/2 cup bell peppers diced
  • 1/2 cup zucchini diced
  • 1/4 cup cherry tomatoes halved
  • 1/4 cup spinach leaves
  • 1/4 cup red onion chopped
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions
 

  • Prepare the Vegetables: Wash and dice the vegetables into bite-sized pieces.
  • Heat the Skillet: In a large skillet, heat olive oil over medium heat.
  • Cook Vegetables: Sauté the bell peppers, zucchini, onion, and garlic powder for 3-4 minutes until softened. Add cherry tomatoes and spinach, cooking for an additional 2 minutes.
  • Scramble Eggs: Beat the eggs in a bowl with a pinch of salt and pepper. Pour into the skillet, stirring gently to scramble with the vegetables. Cook until the eggs are set.
  • Serve: Plate and serve hot.
