Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/4 tsp red pepper flakes optional
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley chopped
  • 4 medium zucchini spiralized into noodles
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley chopped
  • Lemon wedges

Instructions
 

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the zucchini noodles and sauté for 2–3 minutes, just until tender.
  • Season with salt and black pepper. Remove from the skillet and set aside.
  • In the same skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add garlic and red pepper flakes (if using) and sauté for 30 seconds until fragrant.
  • Add shrimp to the skillet. Season with salt and pepper. Cook for 2–3 minutes per side until pink and opaque.
  • Stir in lemon zest and juice, tossing to coat the shrimp. Cook for another minute.
  • Return the zucchini noodles to the skillet with the shrimp. Toss gently to combine.
  • Sprinkle with fresh parsley and garnish with lemon wedges.
