Instructions
Step 1: Cook the Zucchini Noodles
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the zucchini noodles and sauté for 2–3 minutes, just until tender.
- Season with salt and black pepper. Remove from the skillet and set aside.
Step 2: Cook the Shrimp
- In the same skillet, heat 2 tablespoons of olive oil over medium heat.
- Add garlic and red pepper flakes (if using) and sauté for 30 seconds until fragrant.
- Add shrimp to the skillet. Season with salt and pepper. Cook for 2–3 minutes per side until pink and opaque.
- Stir in lemon zest and juice, tossing to coat the shrimp. Cook for another minute.

- Return the zucchini noodles to the skillet with the shrimp. Toss gently to combine.
