Kale and White Bean Soup

Ingredients

  • 1 bay leaf
  • Salt and black pepper, to taste

Instructions

Step 1: Sauté the Vegetables

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5–7 minutes until softened.
  3. Stir in the garlic, thyme, and smoked paprika. Cook for another 1–2 minutes until fragrant.

Step 2: Build the Base

  1. Add the diced tomatoes and broth to the pot. Stir well.
  2. Bring the mixture to a gentle boil, then reduce the heat to a simmer.

Step 3: Add the Beans and Kale

  1. Stir in the white beans, kale, and bay leaf. Simmer for 15–20 minutes until the kale is tender.
